PB BROWNIE MINI CUPCAKES

PEANUT BUTTER BROWNIE CUPCAKE BITES
Today I decided to make something simple-being that it was a lazy Sunday and all.  This recipe involves a box mix (shhhh, I cheated) and Reeses Peanut Butter cups-resulting in the perfect bite sized treat. These will be put out first thing in the morning in my office tomorrow. I'll keep you posted as to how quickly these disappear. Thanks to Bakerella for this recipe!


DIRECTIONS:
1 package Duncan Hines Chocolate Lovers Double Fudge Brownie Mix (easily found in your local grocery store)
2 eggs
1/3 cup water
1/4 cup vegetable oil
30 mini Reeses cups  
1 Box mini muffin liners


1. Preheat oven to 350
2. Place foil liners in mini muffin tins
3. Mix brownie mix (including fudge packet), eggs, water and oil.
4. Stir until well blended.
5. Fill each
 liner with 2 tablespoons of batter
6. Bake at 350 for 10 minutes and remove from oven
7. Gently push 1 Reeses cup into
 center of each brownie bite until it is even with the surface of the batter. Note: Reese's cup will immediately melt-do this as quickly as you can so you don't burn your fingers.
8. Put back in the oven for another 5-7 minutes longer.
9. Cool 5-10 minutes in pan and then move to cooling rack to cool completely.
